Vegan chocolate self-saucing pudding

Probably the most ordinary of desserts, made vegan.

Most supermarkets have an abundance of self-raising flour at the moment. You could always substitute it for plain flour and a bit of baking soda if that’s what’s in your pantry.

No doubt it’d work with gluten free baking mix, so give that a go if that’s your bag.

Only takes about 40 minutes to make start to finish – and you pretty much throw it together. So a viable option if you’re hungry for dessert but too disillusioned to make a real effort.


For the cake batter

1 cup self raising flour

1/2 cup Cadbury Drinking Chocolate

80g Sunrise Table Spread melted

1/2 cup soy milk (full fat)

For the sauce

1/2 cup Cadbury Drinking Chocolate

1 1/2 cups boiling water


Step 1. Preheat oven to 180°C or 160°C if it has a fan.

Step 2. Whisk together all the cake batter ingredients in a bowl. Or use a spoon. Whatever 🤷‍♀️

Step 3. Put batter into an oven-proof dish and smooth out a bit:

Step 4. Sprinkle over 1/2 cup of drinking chocolate powder.

Step 5. Gently pour over 1 1/2 cups boiling water.

Step 6. Bake until it looks done – about 30 minutes:
